A process for the preparation of bakery margarine comprising heating a blend of hydrogenated oils as herein described so as to obtain a liquid phase thereof, characterized in the steps of adding a food emulsifier as herein described thereto in the amount of 0.5 t 2% of the total product, subjecting said mixture to the step of gradual cooling and then to rapid cooling to have a temperature of 25° C to 30° C, said emulsion being subjected to the step of crystallization and then subjecting said product to the steps of stirring and working so as to impart a smooth butter like texture to said margarine .
